We made tortillas!

That’s a sentence I never thought I would say. I love Tortillas but in my quest to eliminate ultra-processed food (UPF), I had to break up with the store-bought version. There’s some scary-sounding stuff in those seemingly benign bags. If you can’t (or wouldn’t) buy a listed ingredient, there’s a good chance it’s a UPF. (You can read more about ultra-processed foods here: Obesity, disease rising with consumption of ultra-processed foods — Harvard Gazette.)

Because we’ve made several breads, I thought why not try tortillas?  I found this recipe from The Café Sucre Farine: Best Ever Homemade Flour Tortillas. There are five simple ingredients in these tortillas: flour, oil, salt, baking powder, and water. I used a stand mixer. We used a rolling pin and cooked them in a cast iron skillet. I rolled the first batch and Robert cooked them. For the second batch, we swapped stations. Robert made more rounded tortillas–I need to learn his rolling pin technique! Mine looked like modern art. Or an amoeba. But they were equally delicious. These are pretty fast to make as bread recipes go. With two people, one rolling and one cooking, it’s easy and fun. Next up: homemade naan!

Sweet potatoes and black beans = yum

I accidentally bought a bag of sweet potatoes when we already had one. So it was time to try a new recipe!

We made Southwest Sweet Potato Black Bean Dip from the Minimalist Baker which was heartier than a dip and delicious. This is easy to make especially if you roast the sweet potatoes ahead of time, and it pairs well with homemade tortillas. I’m just sayin’.
