Saving crunchy cantaloupe!
We recently bought a cantaloupe that wasn’t quite ripe. We had a few crunchy servings before taking to the Internet to find alternatives to eating it raw. Inspired by a recent experiment sauteeing apples, we tried the same trick with the cantaloupe. It’s delicious this way and I may never go back.
Here’s a recipe for grilled cantaloupe but as always, be like Auntie Tab and cook with the spirit!
In addition to cinnamon, cardamom, and nutmeg, here are a few fruit-friendly spice blends:
- Pico Fruta from Penzey’s
- McCormick Sunshine All Purpose Seasoning by Tabitha Brown
- IMO, coffee rub makes everything better. I like the coffee rub from Trader Joe’s and Traeger.
The return of Green Tomato Cake plus Green Tomato Chutney!
Well, there are more green tomatoes at the end of this growing season than red ones so it was time to pull out an old favorite, Green Tomato Cake With Nuts Recipe from The Spruce Eats. You can experiment with the sugar. We used 1.5 cups of coconut sugar and it was plenty sweet. (It does make the cake brown, like a spice cake.)
We also added a small Granny Smith apple and mixed the coconut into the cake. We use a lot of different egg replacers. For this recipe, we used the egg replacer from Bob’s Red Mill.
Really: SO MANY green tomatoes…
We had more tomatoes so I went looking for more options. I was thinking about the cranberry chutney we make every year and wondered if there was a similar recipe using green tomatoes. There is and it’s great! Check out Easy Green Tomato Chutney Recipe from Lovely Greens.
Substitutions and other changes
- We added diced Granny Smith apple
- We added a small hot pepper, diced, in place of the cayenne
- We didn’t have the malt vinegar but discovered it’s sold at our regular grocery store so we plan to pick some up for future use. We used a apple cider vinegar, a common substitute.
- We used coconut sugar but added 2 Tablespoons of brown sugar and some lemon juice at the end to balance the vinegar
