Don’t you love when Spring teases you with a few warm afternoons that lure you into summer and then returns you to 38 degrees without so much as a “By your leave”?
This is why we have soup, my friends.
Celery Soup
This is a family favorite! We often make this celery soup: Creamy Celery Soup (Vegan) – The Simple Veganista. We started adding carrots. Adding white beans would make it more of a meal. A hot pepper would be a good addition. You can blend it or have it chunky style or something in between.

Minestrone
This is the first Minestrone recipe I have liked enough to enthusiastically want to make it again.

Lemon Soup

This is another new recipe for us. I added red pepper flakes and more vegetables at the end. Next time I will add celery, potato, and more beans–maybe white beans or lentils instead of garbanzos. It would probably work well with Farro instead of Orzo.
Warmer days ahead! Until then, the flannel sheets are staying on the bed and soup is staying on the menu.
