We checked out Toni Okamoto’s cookbook, Plant-Based on a Budget, from the library. I’ve been on her mailing list for a while. Whenever I have maxed out on renewals and start feeling like a library book is mine, I know it’s time to get our own copy. That and we had bookmarked about 25 recipes! Our favorites so far are Mexican-inspired soup, Ginger lime tofu, Tofu with peanut sauce, Peanut butter ramen stir-fry, Four ingredient chocolate pie (tasked like chocolate cheesecake!), and Depression-era cupcakes.
Something we appreciate about Toni is that she uses easy-to-find ingredients and doesn’t get too precious about them. This cookbook includes modifications from test cooks. The instructions are easy to follow, and a good variety of dishes are influenced by multiple cuisines. The recipes are quick and easy to make, and she includes pressure cooker directions when relevant. Plant-based eating has the unfortunate reputation of being pricey, but Toni shows that it’s fast, easy and affordable.
