We were in search of a plant-based chocolate chip cookie recipe, and we found it in two tries! The first recipe that we tried billed itself as having “no weird ingredients,” but the cookies were not great. We still ate them, mind you. I’ll take a bad chocolate chip cookie over good broccoli any day.
So the search continued. The second recipe we tried by Ashley Manila from Baker By Nature is unbelievable perfection. A name like The Most Wonderful Vegan Chocolate Chip Cookies Ever sets a pretty high bar, but the hype is real! We love these cookies. Chocolate chip cookies come in many styles. This is a soft puffy type that I prefer. Flat crispy type-lovers: I see you and respect you. I will gladly eat your cookies.
We used Enjoy Life Dark Chocolate Morsels for the first batch but also discovered that Trader Joe’s dark chocolate chips are an excellent option and have less sugar, and are more reasonably priced. We used silicone baking mats and discovered the cooking time might vary. Watch them carefully so that they don’t burn. I’m going to play around with substitutes for the coconut oil–stay tuned for that!
